Spice It Up With Salsa

At my house, we go through a lot of salsa!  My boys love tortilla chips with salsa.  Although we use a lot of salsa, that is the only way it is consumed. In a recent article I found some others ways to bring the spice and flavor of salsa to some other foods.  

Slow Cooker Beef Fajitas:  All you need is flank steak, ground cumin, lime juice and a jar of salsa.  Combine and cook on low for 6 hours or until fork tender, shred the meat and serve in soft tortillas.

Scalloped Potatoes:  Layer sliced potatoes, salsa, sauteed onions and garlic.  Cover and bake until tender.  Top with cheese and bake until melted  For added nutrition, you can add to the layers sliced kale. (they will never know it is there!)

Sloppy Joes:  Brown lean ground beef with onion and bell pepper, add brown sugar, Worcestershire sauce and garlic powder.  Stir in a jar of salsa and a small can of tomato paste and simmer.  Serve on buns and top with cheese.  

Zesty Greens:  Salsa makes greens tastier!  Use spinach, kale or any other leafy green in a large non-stick pan with a dab of olive oil and add a few tablespoons of salsa. Cook until tender.

  1. Oh, I really think salsa would make great sloppy joes! One of my all time favorites is chicken in the crock pot, cover with black beans, mexi-corn and salsa and cook. Serve with or over rice...and delish!

    We do another one with a 3lb pack of boneless skinless chicken -

    1. Sautee cubed chicken in pan (water or oil - your choice)

    2. Add 3 packages of regular Taco mix (follow drections on package)

    3. Add one (approx) 24oz jar of salsa.

    4. Let simmer.

    It is a great spicy (depending on the degrees of heat you used) chicken to use in a variety of ways!

  3. Scalloped potatoes and salsa... what a great idea! I read that salsa outsells ketchup as America's favorite condiment. We love it too. Recently, we've been enjoying green chili salsa as well.ღ

A Blank Page - A Great Way to Fill It

A blank page - that is the first view of a new blog post. It has been a while since I have faced the blank page of my little blog! A blank page can bring a variety of emotions - emptiness, anxiety, pressure to perform or emotions such as inspiration, encouragement or simply bursting to share something. But there is always something fresh and exciting about the blank page of a New Year. Happy 2023! This is always a time in my life where inspiration and plans are formed and ready to be implemented for greater change. Aspirations may start strong, but alone do not make a difference. It takes consistency to create change. The changing or adding small habits is a key to great changes. A habit that has been beneficial in my life for many years is rising early. It began when the children were small and was the only pocket of time I had to myself. Through the years, mornings have become my favorite time of the day. Now that my husband and I are empty nesters, we go to bed early and rise early.
