Do you ever suffer from the after lunch feeling of barely being able to stay awake? It hinders productivity on the job, at home and limits your energy for the rest of the day. The culpirt behind that fatigue - "carbohydrates". Carbohydrates bring a surge of serotonin which leads to sleepiness and low energy levels.
By doing a little change up during the lunch hour, the sleepiness can be eliminated and you can raise the energy level for the rest of the day. The secret is to limit carbs and boost the protein during lunch. Here are a few easy recipes you can try to reap the benefits of an energizing lunch!
Combine a handful of each:
walnuts
grapes
sliced celery
Add cooked chicken breast and chopped apple. Toss with a splash of lemon juice, olive oil and honey.
Turkey-Vegetable Wrap
Cut 1 each:
carrot
bell pepper
small cucumber into matchsticks.
Lay deli turkey slices on work surface and top each with slice cheese. Arrange vegetables down center of cheese. Roll up and slice in half.
Tuscan Tuna Wrap
Combine drained tuna with some cannellini beans, chopped red onions and green onions. Mix with chopped parsley, a dash of lemon juice and olive oil. Wrap in bibb lettuce or a sandwhich wrap.

I totally love waldorf salad - but have always made it with mayo (just like my mama did!) so I have stayed away from it for a bit. I will have to try it again this way!
