Tater Tot Breakfast Casserole

Breakfast is an area of epic failure for me as a homemaker. My hard working husband is up way early and headed to work just as I'm getting up Through the years my sons have learned that breakfast can be quick and easy (if they want any!). On a good morning, I can whip up a bowl of oatmeal or some fabulous cinnamon toast! But it's nowhere near the grits, eggs and bacon my guys love on the weekends. 

 So...this week I saw and new recipe and am sharing (to be accountable to do it!) it! It sounds easy and delicious and is made with tater tots, a favorite at my house.

 Ingredients: 
 1 lb. ground sausage 
1/2 of a 32-oz. bag of tater tots 
1/4 tsp. garlic powder 
1/4 tsp. onion powder 
Salt and pepper to taste 
1 c. grated cheddar cheese 
4 eggs 
1 c. milk 
Preheat oven to 350 degrees. Brown sausage in a large skillet, drain fat. Combine sausage, tater tots, and cheese in a large bowl. Pour into a large casserole dish. In a separate bowl, whisk together eggs, milk, and seasonings. Pour over tater tot mixture. Bake for 35-40 minutes. This recipe can easily be prepared ahead of time and refrigerated until ready to bake.


I mixed this up the night before.  When hubby got up, I popped it in the oven at 4;15 AM (then went back to bed!) He took it out 30 minutes later and it was perfect.  I think this a a breakfast I can do more of in the future!!

Word Filled Wednesday – Act Justly

He has shown you, O man, what is good;       And what does the LORD require of you                But to do justly, To love mercy,       And to walk humbly with your God?    Micah 6:8 Sometimes we struggle so hard with the question “What does God want us to do and be?”  This verse is a simple yet powerful reminder of some simple things that God requires of us.  Act and do justly, love mercy and walk humbly before God.  There are numerous opportunities each day to do justly, to do the right thing or to make the right choice.  We love mercy when we show kindness or mercy oftentimes to those who do not deserve it.  Walking humbly before God is acknowledging He alone is God.  He is the I AM – no one else is.  When we give Him the glory He is worthy of, it will humble our heart before Him.  Obeying God doesn’t have to be unattainable or impossible, but can be a joyful, beautiful journey as we go by step and follow Him.
