Making Sundays Special

Sundays are special! (Usually) before COVD 19, in our family, Sundays were reserved for church and family. We look forward to serving and worshiping in our local church and then coming home to a nice, sit down Sunday lunch.

I've shared before how over 30 years ago when my husband and I were dating, his family introduced me to the blessing of Sunday lunch. After church on Sundays, we would gather at his parents's home where the table would be full of friends, family and delicious food. These were precious times that filled my heart with love, blessing and time to bond and connect with my new family. It stirred my heart to bring this tradition to life in my own home.

Through lots of practice, trial and error, Sunday lunch is an established practice in our home. We enjoy the relaxed time to eat a home cooked meal and eagerly look for opportunities to invite others to join us around the table. 

Now this idea sounds so appealing and relaxed, but it takes much forethought and planning to pull of this experience! That peaceful around the table time can quickly get thwarted if people are made to wait too long for the food to prepare!  Preparation is the key along with comforting meals that can be made ahead of time and be ready quickly. 

I've learned some quick tips and narrowed down some favorite dishes that help make Sunday lunch special I will be sharing here on the blog. The first one is a well known and loved meal and very familiar : Slow Cooker Roast.

Easy Slow Cooker Savory Pot Roast

1 can Cream of Mushroom Soup
1 envelope dry onion recipe soup & dip mix ( I like Beefy Mushroom)
6 medium red potatoes cut in half
3 cups baby-cut carrots or 2-inch pieces peeled carrots
3 pounds boneless beef chuck roast

Step 1
Stir the mushroom soup, soup mix, potatoes and carrots in a 4 1/2-quart slow cooker. Season the beef as desired.  Add the beef to the cooker and turn to coat.

Step 2
Cover and cook on LOW for 6 to 7 hours or on HIGH 4 to 5 hours or until the beef is fork-tender.  

This roast served with a vegetable and some rolls will bring that atmosphere of home cooked love to your table and make your Sunday special!

Sometimes We Score, Sometimes We Block

Our family is in the midst of little league soccer season. My youngest son is playing and his enthusiasm is contagious. He is pretty good at the sport, but what makes it so great is that he loves it! He counts the days until the next game or practice. He loves his coach and teammates. He has moved up an age level this year and the players are working more like team, passing to each other and watching out for each other during play. During the last game, my son scored two goals, they were the only goals of the game. In today's game the team scored eight goals. My son came up afterwards to me and said, "I didn't score today, but I blocked". What a powerful truth those words can hold. In life, sometimes we score, sometimes we block. Construction, Challenges, Chaos

 Who knew something simple could erupt into something chaotic so quickly? A broken file cabinet forced us to purchase a new one. We found one online, ordered it and it arrived quickly with a do it yourself assembly book, complete with 24 part packages and 18 steps of instructions!  As we unpacked the items and compared with the instruction book, we realized a part was missing. Customer service was called, a replacement part was quickly received. Except, the screws did not fit into the holes on the replacement part. We tried again, received another part, same issue.  Meanwhile, the 24 packages of parts are spread out on my living room floor, customer service does not understand my issue, they asked for photos which were sent and now we are again, waiting for a part.  It seems every project faces the inevitable delay.
